This weeks inspiration has really been in the kitchen, but as per usual one of my resolutions is to eat better and keep higher quality foods around. Choosing Raw by Gena Hamshaw was a really terrific library checkout that I've already used 5 times in the week and a half I've had it out.
What I love about this specific raw cookbook (lets be real, it's probably the 18th raw cookbook I've had out from the library), is how accessible it is. It uses pretty everyday items, nothing crazy or that out of the ordinary. Minor for a lot of health nuts, but major for a beginner like myself.
Tonight I made raw vegan quinoa sushi for dinner - big hit. My first attempt at sushi, and I quite successfully made 4 rolls! I was super proud of myself.
I've also dug into chia seed pudding and cashew cheese (images borrowed from Gena's website).
The cashew cheese is divine! Really, it's quite delicious - and super easy.
I have made a kale and carrot salad as well, and a couple of her smoothies. It's safe to say I'm absolutely loving this book.
